Paleo Sweet Potato Chili
Ingredients
- 2 pounds grass-fed beef or bison
- 1 tablespoon ghee, butter, or coconut oil
- 1 small onion, chopped fine
- 4 cloves fresh garlic, chopped fine
- 4 cups sweet potatoes, chopped into 1-inch pieces
- ½–1 cup celery, diced
- 2 cups red sauce or crushed tomatoes
- 2 cups good quality broth
- 1½ tsp sea salt
- 2 bay leaves
- 2 tablespoons chili powder
- 1 tablespoon cumin powder
- ½ tsp dried oregano
- ½ tsp cinnamon powder
- ¼ tsp ginger powder
- ¼ tsp allspice powder
- Avocado slices and fresh cilantro for garnish
To Make Paleo Sweet Potato Chili
- Combine all spices and salt in a small bowl and set aside.
- Melt fat in a large pot and cook onions until they begin to turn translucent and slightly browned. Add ground meat and garlic. Continue cooking until meat is completely browned.
- Pour in red sauce (or crushed tomatoes) and broth. Add spice mixture. Stir well, cover, and simmer for 5 minutes to meld flavors.
- Add sweet potatoes and celery, stir well, cover, and simmer gently for 40 minutes, stirring a couple of times.
- Top with avocado slices and fresh cilantro and serve.
