Roasted Sweet Potatoes
Ingredients
Plain Version
- 2 pounds sweet potatoes (about 3 large), peeled and cut into ½-inch pieces
- 2 tablespoons melted coconut oil
- ¾ teaspoon fine sea salt
- 1 tablespoon light brown sugar, firmly packed
Seasoned Version
- 2 pounds sweet potatoes (about 3 large), peeled and cut into ½-inch pieces
- 2 tablespoons olive oil
- ¾ teaspoon fine sea salt
- ¼ teaspoon pepper
- ½ teaspoon ground chili powder
- ½ teaspoon paprika
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
To Make Roasted Sweet Potatoes
- Preheat oven to 425°F.
- Peel and cube sweet potatoes into ½-inch pieces.
- Add to your largest sheet pan (15×21 inch works great). Add oil and seasonings; toss to coat all pieces evenly.
- Spread out in an even single layer—no overlapping, or they will steam instead of roast.
- Flip every 10–15 minutes, cooking for a total of 27–35 minutes until caramelized and crispy on the outside, soft inside.
